FRESH TRENDS at GASTexpo fairs 2018

 

Renowned experts from the HORECA field are preparing for the forthcoming professional fair of TASTES GASTexpo 2018 for the 12th consecutive year.

 

This year's program is even bigger, more professional and full of NEW events with international participation of both masters and competitors! Most workshops are free for participants. In some cases, prior registration is required as the number of places is limited.

 

One of the novelty is BEER - BEER BREWING workshops, GUIDED BEER TASTINGS and the CHAMPIONSHIP FOR GASTexpo BEER OF THE YEAR.

 

In addition to already established professional workshops of top-class cuisine, preparation of ice cream, confectionery, bakery, pizza making, preparation of coffee, cocktails, trendy bio/vegan cuisine and other workshops this year, we are presenting beer brewing workshops and guided beer tastings!

 

At last year's fair we recorded as many as 15,000 visitors, among which more and more from neighboring Croatia and other countries. The various and high quality offer of exhibitors and presented innovations attract and convince many visitors.

 

At the same time, the Alpe Adria Natour fair will be held, the same ticket allows entry to both fairs. At both fairs, there are nearly 450 exhibitors.

What are the latest trends in gastronomy? What's new in the kitchen technological innovations? How to prepare desserts from TV screens? What's the difference in the preparation of bright and dark beers? Why is wood added to some beers? What are the most delicious vegan dishes?

 

All answers will be collected in one place, from January 31st to February 3th 2018 at Gospodarsko Razstavišče in Ljubljana. 


 

WORKSHOPS 2018


New at the fair: beer brewing workshops and guided beer tastings

A team of experts from the company Pivopis d.o.o. will lead us through the beer brewing processes, where you will learn more about beer making ingredients, the equipment you need, a number of tricks, tips and practical tips. For all beer enthusiasts, we will also prepare guided beer tastings through a wide variety of flavors of this hop's drinks. You will learn about the history of beer, the basic beer brewing process, the 4 main brewery guidelines around the world, the organoleptic characteristics of beer, the proper technique for beer tasting, the appropriate dispensing and use of glasses. No doubt it will be interesting to find out more about this. WEDNESDAY January 31st 2018 and SATURDAY February 3th 2018 at 3 pm and 5 pm.

 

Master Brewers from Laško Union Brewery d.o.o. prepared interesting workshops, which will be held THURSDAY February 1st 2018 and FRIDAY February 2nd 2018.

 

At 2 pm The brewery's master's talk about brewery "This is how big brewers brew beer" (theoretical presentation and beer tasting). What kind of raw materials are big brewers using? Do big brewers know how to brew Craft beer? You will get unambiguous answers by looking at the insights of a large brewery. The beer brewery makers know the answers. Tasting by comparing classic lager beers with new ideas and paths.

 

At 3:30 pm Draught beer - the best beer (theoretical and practical presentation of the correct brewing of beer). Does draught beer have to have foam? For how long after the keg is open, the beer remains good? Why beer makes you burping and bloated? How do you know if beer is fresh? You will get answers to this and many other questions that cover the correct procedures.

 

The master of French confectionery, with the diploma of the prestigious Paris Gregoire Ferrandi International School - Naser Gashi, will host free confectionery and bakery workshops La GANACHE. He will be preparing:

 

  • French colored Macarons from egg white and almond flour (Wednesday, January 31st, 2:00 pm – 4:00 pm)  
  • French Fraiser cake, filled with strawberries and cream (Thursday, Februar 1st, 10:00 am – 12:00 pm)  
  • Chocolate souffle with a liquid center, which also originated from France (Friday, February 2nd, 10:00 am – 11:30 am) 
  • Traditional French Baguettes (Friday, February 2nd, 12:00 pm - 5:00 pm) 
  • Buns for homemade hamburgers (Saturday, February 3th, 11:00 am – 3:00 pm)

Preparation of ICE CREAM and CONFECTIONERY workshops with Makabo, representatives of a recognized international university Carpigiani Gelato University from Italy, which is a leader in the art of ice cream making. At the MAKABO exhibition space will be held a tasting of 16 different flavors of ice cream throughout the entire fair. They will also offer ENJOY CAFFE coffee, which will be served along with soft serve ice cream. We can't wait for the workshops of hot ice cream ("gelato caldo") where you will find out more about combining coffee and ice cream. Also, a workshops will be dedicated to the the use of dry fruits in ice cream and confectionery, since the trends of confectionery are increasingly in favor of candied fruit. It is certainly a real challenge to prepare ice cream from a recipe for Sacher cake, cremeschnitte or even walnut pie. You can now get all the secrets and tricks from real ice-cream masters!  

 

Workshops will be held every day of the fair. 

 

The SCHOOL OF PIZZA It will be held under the guidance of the best Italian masters and world champions in cooperation with the Section of Pizza Chefs of the Slovene Association of Chefs and Confectioners. Each participant will receive a certificate. On Wednesday, January 31st 2018, from 11:00 am to 2:30 pm, you will learn how to prepare the classic pizza, and on Thursday, February 1st 2018, from 10:30 am to 2:30 pm, a gluten-free and a whole grain pizza. On Friday, February 2nd 2018, there will be daily demonstrations of pizza baking.

 

For the first time this year there will be bio and vegan workshops for all 4 days of the fair.

 

On January 31st and February 2nd the Slovenian Vegan Society will host workshops entitled THE POT OF HEALTH.

 

In their showroom you will be able to receive information about veganism and cooking without animal-derived ingredients. Also, it will be possible to see the preparation and taste home-made vegetable milks, soybean goulash and egg-free pancakes. They will also provide various ideas about healthy cooking and how to stay friendly to animals and the planet. You can also apply for a free 30-day Vegan challenge (www.izziv.si), which has been held in Slovenia for the fifth consecutive year, and the number of participants in total exceeds 5,000! A more detailed presentation of the 30-day Easy Vegan Challenge will be available at the GASTexpo fair. At the workshops we will prepare a classic pizza in a vegan way and demonstrate the use of the vegan "egg-white" - aquafaba.

 

The Animal Protection Society and Nikina kuhalnica will share information on the ethical way of eating and living and how to put them together in practice at the KITCHEN OF THE FUTURE workshop on February 1st and 3th. They also invited Klara as a guest (Vegan Guide) who will tell us more about where to buy certain products and about affordable vegan products. The main ingredient will be MILLET PORRIDGE - will prepare desserts, salty dishes, puddings, creams and much more from this simple cereal.

 

The Bartenders Association of Slovenia will held COCKTAIL PREPARATION WORKSHOPS.

 

On Wednesday January 31st, at 4.00 pm, the theme of the workshop will be a long mixed drinks, Friday, February 2nd from 11.00 am to 4.00 pm non-alcoholic cocktails and after dinner cocktails. On Saturday February 3rd at 11.00 am they will held a workshop with a theme of cocktails with sparkling wine.

 

We are looking forward to a variety of HORECA workshops, where leaders from the field will share their ideas, knowledge and experience!

 

Workshops will be held every day in the fair, where they will present themselves at a larger exhibition space with their program and workshops.

1st Championship GASTexpo BEER OF THE YEAR - For the first time on the fair

On the basis of assessments of beer experts, a credible rating of Slovenian craft beers will be carried out, and thus the holder of the »GASTexpo BEER OF THE YEAR« title will be selected. Each brewery will be able to participate with 2 different beers. The first three will receive prizes. The announcement of the results will be on Saturday, February 3th 2018, at 2 pm.

 

8th International Championship of GELATO

The championship is open to confectioners/ice cream makers that have their own production of ice cream in Slovenia and abroad. This year's selected taste is ROSE. The members of the jury are remaining a surprise. Sign ins and production of gelato samples will be Friday, February 2nd 2018, start at 10:00 am, award ceremony at 4:00 pm.

 

6th INTERNATIONAL CAMPIONSHIP »BEST PIZZA CHEF OF SLOVENIA«

The championship is open to all pizza chefs and chefs. You can compete as an individual or as a representative of your pizzeria /restaurant. The first rprepared pizza has to be a MARGHERITA, the other is a competitor’s own creation, by which they will have the opportunity to show their boldness and creativity! The championship will be Friday, February 2nd 2018, start at 10:00 am, award ceremony at 5:00 pm.

 

2nd NATIONAL CHAMPIONSHIP IN COCKTAIL PREPARATION - non-alcoholic cocktails

At the Fairs of tastes will take place the National championship in cocktail preparation - non-alcoholic cocktails, Thursday, February 2nd 2018, at 10:00 am, and National championship cocktail preparation - after dinner, Thursday, February 2nd 2018, at 4:00 pm. The contest is open to all who want to participate with their own authorial recipe and compete in the preparation of cocktails.

 

 

Get new knowledge at the workshops, show the already acquired knowledge in the competitions, and above all, feel fresh tastes and get to know all the novelties at the exhibition pavilions of renowned experts. You are invited to the GASTexpo fair 2018!
