PROFESSIONAL EVENTS


 

Most of the PROFESSIONAL EVENTS will take place AT THE FAIRGROUND in an especially dedicated area in Hall A2. Part of the professional program will be held right of the entrance hall and on exhibition spaces of some exhibitors.

This year the professional program is more visible, more professional, comprehensive and full of high profile events with international participation.
The COURSES and the PRESENTATIONS are aimed at both the PROFESSIONAL as well as the GENERAL PUBLIC.


NEW COURSES
At the contents of schools, courses and competitions in the fields of making pizza, bread, ice cream and sweets, this year we will add courses and competitions in the preparation of coffee and cocktails under the common name COFFEE.

1st NATIONAL CHAMPIONSHIP IN AEROPRESS (Friday, 3rd February 2017)

The traditional Championship of manufacture PIZZA "BEST pizza chef Slovenia" becomes even more interesting, because now the winner travels and competes on the World Cup!

Visitors will be enriched their knowledge on free educational workshops. There will be 14 PROGRAM WORKSHOPS:


Workshops brewing COFFEE

Professional workshops, lectures and presentations preparation of various coffee drinks. Section topics will cover areas how to perfect espresso and correct recipe for modern espresso, presentation preparation Signature drinks known by Coffee and Good Spirit, Latte art workshops, Hand brew presentation, cupping degustation with coffees from around the world, as well as a lecture on the history and culture of drinking coffee and much more.

Workshops PREPARATION OF ICE-CREAM / Confectionary presentation in Showroom

In a program of confectionery and ice cream workshops with top masters. You will be able to choose among a variety of workshops and by preparing traditional cakes in a simple manner (Milefoglie, tiramisu, Sacher, Cheesecake, ...), Gelato to Passeggio - Preparation of ice cream lights, preparing ice cream tub, vegan semifreddos (sorbeto), decoration of ice cream in ice cream display case.

Confectionery workshop La ganache

Culinary master confectioner from French school Naser Gashi is the founder of the first French confectionery education and a comprehensive range of tasty and sophisticated treats in Slovenia. At the fair will be led by trendy courses manufacture confectionery.

WORKSHOP »SOUS VIDE«

Thursday, February 2 2017, 12.00 to 14.00

»Sous vide« is very popular cooking method. »Sous vide« is a French term and means »cooking under vacuum«. You can cook vacuum-packed meat, vegetables, fishes, fruits and other foodstuffs siutable for cooking in a water bath at low temperature (50 to 70 degrees). Workshop will be led by Dejan Turk, the chef of the restaurant named Barbecue kings BBQ and Renato Bedene, who is an expert of SOUS VIDE apparatus and vacuuming.

HOW TO PREPARE FOR A FOOD INSPECTION?

In Slovenia, there is a law for all the people who have a contact with food in their workplaces. They must have to pass the sanitary cource HACCP but there is still the fear of food inspector.
On the seminar, you will figure out all about inspection; where to pay attention, there will be shown best examples in practice, you will also learn what is obligatory by the law and what is not.

SPOILING WITH »SOČA« TROUT – COURSE AND CULINARY EVENT

There will be an unique event with Primož Dolničar, the defender of Slovenian cousine and Ernest Barać who is a master in the preparation of Sushi. Primož will prepared Slovenian first class fishes, while Ernest will show you the right tehnique of preparing Sushi. Together will show you how to filleting the fish, quick and right. After that, there will be banquet with several cources of menu followed by top wines brand Ferdinand – Wine celler Četrtič. Masters Primož and Ernest will use cooking knifes, brand Oster Rob.

Culinary and confectionary chefs and professional bartenders and Barista their knowledge, experience, imagination and creativity can be presented to the Commission in professional competitions. Introducing the 5 programs of the competition:


7th International Slovenian Open Championship of GELATO

The championship is for pastry chefs and ice cream makers, which have their own local production of ice cream in Slovenia or other countries.
This years flavour is STRAWBERRY

2nd BARTENDER BATTLE CHALENGE – FINALS

Saturday, 4th February 2017 at 10 am

During the competition Barista goes through six different challenges, which mimic the working environment of a professional Barista: Cupping, Latte Art, Brewing, Contract, Signature drink and knowledge.
These events are designed to test the breadth of knowledge and skills, presentation of the baristas which compete face to face in battle under the pressure of time.

HAPPENINGS AT THE EXHIBITION SPACE OF SLOVENIAN COMPAY KREMENITI D.O.O.

18 years old Matej Zupančič, the contestant of the cooking show Master Chef Slovenia is excellent at cooking. He got varrious national and international Culinary awards. At the ehhibition space of the company Kremeniti d.o.o. will be prepared a variety of everyday food. Workshops and degustations will be held every day during the Fair.
